Angel Hair Pasta with Miso Cod


  • 500 gms angel hair pasta
  • 500 gms black cod, cut to pieces
  • Bean sprouts (optional)

For the marination:

  • 1 tbsp Japanese miso
  • 2 tbsp sake
  • 3 tbsp merin

For the sauce:

  • 2 tbsp Japanese miso
  • 1 tbsp sake
  • 3 tbsp merin
  • 1 liter double cream
  • 5 cherry tomatoes cut to half
  • Salt and white pepper


  • In a medium sized bowl, mix the marination ingredients, add the black cod and put in a closed container (or Ziploc). Prior to cooking, marinate the black cod in the miso mix overnight.
  • Preheat the oven for 5 minutes at 180F.
  • In a saucepan, put the double cream, miso, sake, merin, salt and white pepper. Let it simmer in very low heat, stirring occasionally. Add the cherry tomatoes then turn off the fire immediately.
  • Bake the marinated black cod for 10 to 15 minutes.
  • In a big pot, boil water and add the pasta. After 8 minutes, drain the pasta into a colander.
  • Put the pasta in a serving dish and mix the miso cream sauce. Top it with cod and bean sprouts.

Preparation time: 30 minutes.

Serves 6-8 persons.
