(New Orleans) – I love oyster! And I really mean it! I love oyster! I can easily eat 2 dozens in less than 5 minutes. Most Pinoys grew up liking oyster as well. It’s cheap and accessible. For those who can’t eat raw oyster, the most popular alternative is Rockefeller, half-shell oyster topped with green herbs or spinach, a rich butter sauce, bread crumbs and then baked or broiled.
When I learned that Oyster Rockefeller was first created here in New Orleans, I swore that I would not leave NOLA without trying the real authentic version of this dish. Luckily, I only needed to walk 5 minutes from my hotel to the birthplace of this famous oyster dish, Antoine’s.
- Huitres en coquille a la Rockefeller (notre creation) – Oysters baked on the half shell with the original Rockefeller sauce created by Antoine’s in 1889
- Huitres Thermidor – Fresh Louisiana oysters baked on the half shell with a bacon and tomato sauce.
- Huitres a la Foch – Fresh Louisiana oysters baked on the half shell with a white wine sauce seasoned with onions, pimento, and fresh peppers.
